Recipe Details
- 12 oz can white corn, drained
- 12 oz can french green beans, drained
- ½ C finely chopped green bell pepper (more if desired)
- ½ C finely chopped red pepper (more if desired)
- ½ C finely diced red onion (more if desired)
- 12 oz can red beans, drained
- 12 oz can black beans, drained
- 12 oz can garbanzo beans, drained
- 1 cup finely diced cucumber (I usually remove the seeds)
- ½ c. carrot matchsticks (for color- break them apart so they are even smaller)
- 1 small pkg. frozen petite peas ( I thaw them in the refrigerator and put them in last so they stay bright green)
- ½ C sugar
- 1 C vinegar (I use part balsamic vinegar)
- ½ C oil (I use part olive oil)
- 1 T kosher salt and ground pepper to taste
Combine:

Combine the following and mix with the veggies/beans:
½ C sugar
1 C vinegar (I use part balsamic vinegar)
½ C oil (I use part olive oil)
1 T kosher salt and ground pepper to taste
Chill and enjoy (more flavorful if it marinates for a few hours at least)
