Marinated Veggie & Bean Dish

Recipe Details

Ingredients:
  • 12 oz can white corn, drained
  • 12 oz can french green beans, drained
  • ½ C finely chopped green bell pepper (more if desired)
  • ½ C finely chopped red pepper (more if desired)
  • ½ C finely diced red onion (more if desired)
  • 12 oz can red beans, drained
  • 12 oz can black beans, drained
  • 12 oz can garbanzo beans, drained
  • 1 cup finely diced cucumber (I usually remove the seeds)
  • ½ c. carrot matchsticks (for color- break them apart so they are even smaller)
  • 1 small pkg. frozen petite peas ( I thaw them in the refrigerator and put them in last so they stay bright green)
  • ½ C sugar
  • 1 C vinegar (I use part balsamic vinegar)
  • ½ C oil (I use part olive oil)
  • 1 T kosher salt and ground pepper to taste

Combine:

12 oz can white corn, drained

12 oz can garbanzo beans, drained

Combine the following and mix with the veggies/beans:

 

½ C sugar

1 C vinegar (I use part balsamic vinegar)

½ C oil (I use part olive oil)

1 T kosher salt and ground pepper to taste

 

Chill and enjoy (more flavorful if it marinates for a few hours at least)
