Ingredients:
- 5 lbs of red potatoes, unpeeled
- 1 cube of butter
- ½ cup flour
- 4 cups milk
- 2 teaspoons salt
- 1 teaspoons white pepper
- 2 cups shredded cheese
- Paprika
White Sauce:
Melt butter in saucepan. Stir in flour to make roux. Slowly add milk while stirring. Bring to a boil to thicken, while stirring constantly. (will burn easily, so watch it!) Add salt and pepper.
Boil potatoes just until done – do NOT overcook. Cool, peel and shred. Put in sprayed 9×13 pan. Cover with white sauce and fork through to cover well. Cover with cheese and sprinkle with paprika. Cover in foil and bake at 350 degrees for 30-45 mins., until heated through.
