Kari’s Pumpkin Cookies (Doubled)

Recipe Details

Cook Time: 13 Minutes
Ingredients:
  • 2 C shortening
  • 2 C sugar
  • 2 C pumpkin
  • 2 eggs
  • 2 t vanilla
  • 4 C flour
  • 2 t soda
  • 2 t baking powder
  • 2 t salt
  • 2 t cinnamon

Cream shortening and sugar. Add pumpkin egg and vanilla. Beat. Add dry ingredients. Mix. Drop by rounded tablespoons on sprayed cookie sheet. Bake at 350 degrees for 10-13 mins. Frost when all the cookies are done.

 

Frosting:

 

In a saucepan:

6 T butter

1 C brown sugar

½ cup milk

 

Boil for a short time to melt sugar. Add:

 

1 t vanilla

3-4 cups powdered sugar (to desired consistency)

 

Mix with beater. Frost immediately. Frosting isn’t “frostable” after too long. Enjoy!

 

Makes about 70 cookies
