Pumpkin Bars (Bonnie Poulsen)
Combine and stir well:
2 cups sugar
2 cups pumpkin
4 eggs beaten
¾ cup butter, melted
Add and mix well:
2 cups flour
2 tsp baking powder
1 tsp baking soda
½ tsp cinnamon
Stir in:
1 cup chopped pecans or walnuts (optional)
Pour batter onto a greased jelly roll pan. Bake at 325° for 25-35 minutes
Frosting:
1 – 3 oz cream cheese, softened
¼ cup plus 2 tbsp butter softened
1 T half and half
3 cups sifted powdered sugar
1 tsp vanilla
