Cashew Chicken Salad

Recipe Details

Ingredients:
  • 2 cups chicken - cooked and diced
  • 2 stalks celery - diced
  • ½ red pepper - diced
  • 4 green onions - diced
  • 3 cups tri colored spiral pasta - cooked
  • ¾ cup packed brown sugar
  • 1 ½ cups mayo
  • 1 tablespoon apple cider vinegar
  • 1 ½ teaspoons salt
  • 1 ½ teaspoons lemon juice
  • 2 cups cashews

Mix chicken, celery, pepper, onions and pasta in a large bowl. Mix brown sugar, mayo, vinegar, salt and lemon juice in a medium bowl. Pour mayo mixture over pasta mixture. Stir. Cover and refrigerate over night, if possible. Just before serving stir in cashews.

Reduced amount of sauce if you want to make a little extra:

¼ cup brown sugar

½ cup mayo

½ t apple cider vinegar

½ t salt

½ t lemon juice
