Basil Chicken Parmignana

Cook Time: 20 Minutes
Ingredients:
  • 8 oz. Rotini – cooked, serve chicken on top
  • 4-6oz. Boneless, skinless chicken
  • 2/3 C Italian seasoned bread crumbs
  • ½ C grated parmesan, divided
  • 2 eggs, beaten
  • 1 T olive oil
  • 26 oz. Jar pasta sauce
  • ½ C fresh basil, chopped
  • 1 C shredded mozzarella
  • 2 T minced Italian parsley

Cut each chicken breast into 2 pieces, flatten ¼” thin with mallet. Combine bread crumbs with ¼ C parm. Dip chicken in beaten eggs and dredge in bread crumbs. Brown chicken in oil 1-2 min. each side on med-high heat. Remove from heat. Stir together pasta sauce and basil. Put 1 C pasta sauce in bottom of 9X13 inch pan. Put chicken in sauce, pour remaining sauce over the top. Sprinkle with mozz and parm. Bake at 350 for 20min. Sprinkle with parsley and serve over pasta.
